What is Shellfish Depuration and Why We Do It
Shellfish, by nature, are filter feeders – they continuously draw in surrounding water, which can accumulate bacteria, marine toxins, and other impurities within their tissue. Depuration is a scientifically controlled purification process where live shellfish are placed in clean, regulated seawater tanks under carefully monitored conditions, allowing them to naturally expel these contaminants over a defined period. This process ensures that every shellfish leaving our facility is biologically clean, safe for raw consumption, and free from harmful pathogens.
