Depuration is a scientifically controlled purification process where live shellfish are placed in clean, regulated seawater tanks, allowing them to naturally expel bacteria, toxins, and other impurities. This process ensures our shellfish are certified safe, clean, and ready for raw consumption, meeting the strictest international food safety standards.
